Chickpea Chocolate Chip Cookie Dough Bites

Equipment

  • Cuisinart food processor

Ingredients
  

  • 2 cups cooked chickpeas rinsed if in a can, or cook your own
  • .5 cup nut or seed butter of choice You can also make your own by simply processing nuts in your food processor. I used a combo of almond, walnut, and hempseed.
  • 2 Medjool dates pits removed
  • .25 c maple syrup
  • .5 tsp salt
  • .5 cup chocolate chips cocoa nibs can be used for less sugar
  • maldon salt for garnish salt as a garnish will put these over the top as delicious

Instructions
 

  • Add all ingredients to food processor and blend till smooth
  • chill in fridge for 20 minutes
  • Roll dough into cookie dough bites and refridgerate them until you eat them. They can also be frozen.
  • If you want to turn this dough into baked cookies you can simply add 1/4 tsp baking powder, 1/4 tsp baking soda to the dough when in the food processor, and bake at 350 for 15 minutes.

Notes

If you process your dough for a long time it will be warm, beware if you don't want the chocolate chips to melt, you should chill the dough a bit before adding them.
